Pudhina Rice

Ingredients:
  • 2 cups rice
  • 1 tomato chopped
  • 2 potatoes peeled and diced
  • 1 tblspn ginger, garlic paste
  • 1/2 tspn chilli powder
  • 1 onion finely chopped
  • 1 cinamon stick
  • 2 cloves
  • 1 cardamom crushed
  • 1 tspn nutmeg powder
  • 1 cup pudhina leaves chopped
  • 4 green chillies chopped
  • 1 tblspn ghee
  • 1 tblspn oil
Method:
  1. First, soak the rice in water for about half an hour. In the meanwhile blend pudhina and chillies to make a fine paste. Keep the paste aside.
  2. Once soaked strain the water from the rice and spread it in a paste.
  3. Now take a pan and heat ghee in it. Pour the soaked rice and saute for 5 min.
  4. Remove the fried rice from the stove and keep aside.
  5. Take a seperate pan and put 2 tblspn ghee in it.
  6. Saute them for a while and then add the chopped onion. Fry until the onions turn brown. Now add the ginger garlic paste and saute for another 2 min.
  7. Add the tomatoes and fry till they soften. In the tomato mix add potatoes and pudhina paste and saute for 8-10 min.
  8. Now pour 3 cups of water in the mixture. Bring the water to boil and then add rice and salt.
  9. Mix well and pressure cook. Remove from the flame after two whistles.
